Sweet and Smokey Paprika Chicken Traybake


Probably the simplest way to make your food.


On your marks, get set, TRAYBAKE!!!!!


The great thing with the tray bake is that you can literally throw whatever veg you’ve got at the bottom of your veg tray in with spices and ingredients that you want for your macros and bake them off whilst you go and do something else, like pat the dog, snog the wife or play with your kids!


Level: Easy


Serves 3-4


400g chicken breast or trimmed thigh - works great with pork or tofu too.

4 big red peppers (ok 1 was green)

1 big leek diced and soaked (optional)

1 corn on the cob - halved (optional)

1/4 large sweet potato (not necessary)

4 fat garlic cloves (I used smoked optional)

15g sweet smoked paprika

Pinch of oregano

1 bay leaf

60g olive oil

< 1 tbsp of a red vinegar (Sherry, red wine etc)

2 tbsp sugar or 1 heaped tbsp honey

1 tsp nigella (black onion) or sesame seeds

Tbsp flakey salt

Crack of black pepper


Preheat oven to 200C

Add all to a deep tray, rub and mix very well.

Roast on the top shelf for 50 minutes - turning and mixing halfway.


Serve fresh with rice, sour cream and flaked almonds for the crunch or just itself.
